Sydney’s Brighton-Le-Sands welcomes its first MGallery Collection hotel this week following a multi-million-dollar transformation of Novotel Sydney Brighton Beach.
The Brighton Hotel Sydney – MGallery Collection, located on the Botany Bay foreshore, features 307 rooms and suites, many with private balconies and water views, an elevated coastal design, Mediterranean dining, indoor and outdoor pools, fitness centre, and an expansive events offering including a second showpiece ballroom.

The retail complex, previously known Bayside Plaza, has been redeveloped into a food and dining precinct – this will be completed and launched by Summer 2025/2026.
The resort will include an additional four restaurants, plus wellness offerings such as The Blow Bar and Sol tanning.

“Backed by a multi-million-dollar refurbishment over the past three years with a vision to honour our proud legacy, every space has been transformed – blending coastal ease with European-inspired elegance; from midscale roots to its new identity as a luxury resort experience,” said Cluster General Manager, Ajay Vaid.
“Now in its final stages, The Brighton Hotel Sydney transformation has reimagined every level of the hotel — from the ground floor through to level 14.”
Blending “beachside serenity and city-side convenience”, the hotel’s new look is inspired by its natural, coastal surroundings and celebrates Brighton-Le-Sands’ rich Greek-Australian culture.

Behind expansive glass facades, the hotel’s interiors feature calming textures, natural materials, and a palette drawn from seafoam, stone and sun.
Hatted restaurant Ammos Brighton, the property’s signature Mediterranean restaurant, is helmed by Greek-Australian chef Peter Conistis, while Coco’s on the Beach offers a casual dining experience with bar bites and craft beers.
Sands Bar features flexible indoor-outdoor spaces, waterfront views and a contemporary menu, as well as a seasonal adults-only beach club, launching this weekend.

Additional dining concepts and venues will be unveiled over the summer.
The hotel is expected to be popular with both leisure and corporate travellers as well as for conferences and events bookings.
Vaid said they are expecting “professionals who stay during the week for work but value convenience, reliable services, and the option to extend their trip for leisure and relaxation” and “corporate groups and associations booking multi-day meetings or training events, often including overnight stays and catering”.

With 11 event spaces on site, the most noteworthy addition is The Brighton Ballroom, which can accommodate up to 600 guests.
“Framed by sweeping floor-to-ceiling windows that open out to uninterrupted views of Botany Bay, the ballroom captures the essence of coastal luxury,” Vaid said.
“Contemporary chandeliers and soft, sculpted ceiling details create a warm golden glow, while the custom carpet design adds a bold, modern touch – striking the perfect balance between elegance and style.
