Portlander Bar & Grill, the popular steakhouse nestled in the Rydges Wellington hotel, has appointed Sky Singh as Head Chef.
Singh has worked in a number of local Wellington establishments, and no stranger to the Portlander kitchen, as he has been with the Rydges family since 2019 when he started out as a dishwasher before moving his way up through the ranks.
“Stepping into the role of Head Chef, and at an place I have always admired, is incredibly exciting,” says Singh. “Being part of the Rydges team has really given me a strong foundation to grow through knowing each element of the kitchen. The team has constantly empowered me by offering new experiences and pathways within the company. This new role feels like a culmination of all the skills I’ve learned across the different kitchens.”
Weltec & Mentors
Singh trained at Weltec and credits a number of mentors for his success and opportunities. “Since starting with Rydges, I’ve had so many opportunities to upskill and learn from the best, including previous Portlander chefs, but also those working in other restaurants, such as Ben Francis, the Executive Chef at Rydges Wellington Airport.”
Portlander is known for its local suppliers, and Singh has wasted no time getting to know them. Recently taking a trip to visit producers for a behind- the-scenes look at how fresh produce destined for the restaurant is carefully selected, Singh ensures guests ignite their senses and enjoy the ultimate Portlander experience every time.
