InterContinental Sydney Coogee Beach is set to welcome its first guests this December, under a dual-phase opening, introducing a new coastal luxury experience to Sydney’s Eastern Suburbs.
Following a major transformation of an existing Crowne Plaza, the new-look hotel will feature 198 guest rooms, including 22 suites with indoor and outdoor spaces, expansive lounges and outdoor baths.
On opening, guests will have access to two food and beverage venues; Shutters Restaurant and Bar, offering a menu of modern Australian cuisine with Mediterranean influences, and Rick Stein at Coogee Beach, where the popular chef will introduce his signature seaside dining style.

The hotel’s design details will take inspiration from the coast with curved, wave-like joinery to mimic the shore outside, floor-to-ceiling windows, “sun-washed whites” and “gentle textures”.
March 2026 will see the arrival of the leisure deck featuring an ocean-facing infinity edge swimming pool, poolside bar, outdoor event terrace and indulgent day spa along with Club InterContinental.
Wellness will be a core focus of the offering with restorative rituals at Eliva Spa and state-of-the-art facilities on offer as well as a range of activities, from sunrise yoga by the sea to pickleball on the hotel’s dedicated courts.
